Muesli is probably the best breakfast invention of all time! We have three conditions for our breakfast: when we roll out of bed in the morning, it should be quick, taste good and keep us full for a long time. Nothing is easier than making a bowl of muesli, adding some fruit and milk, and done! Unfortunately, supermarket muesli is often loaded with sugar and other ingredients we absolutely don't want in our breakfast. That's why we're big fans of baking our own muesli.

The best thing is that you can make it exactly to your own taste. So this recipe is meant more as a base - you can add more ingredients and spices as you like or leave others out. While the muesli is in the oven, your kitchen will smell heavenly and reward you for the little bit of extra effort. Oh, and it tastes delicious - and it's much healthier and more natural than the stuff from the packet!

You could add, for example: cinnamon, vanilla, cardamom, coconut flakes, raisins, cranberries, dried apricots, freeze-dried strawberries, goji berries, sunflower seeds, pumpkin seeds, amaranth, chia seeds... as you can see, the possibilities are endless. Have fun experimenting!

Basic muesli recipe for one large jar:

  • 4 cups* rolled oats
  • 1/2 cup puffed wholegrain rice
  • 1/2 cup puffed quinoa
  • 1 cup nuts (e.g. pecan, cashew, almond, walnut)
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  1. Preheat the oven to 180C fan
  2. Mix the oats, puffed rice + quinoa and nuts in a large bowl
  3. Mix the maple syrup and coconut oil in a small bowl. (The coconut oil should be liquid, so warm it up briefly if it's solid)
  4. Add the mix to the remaining ingredients and stir well so everything is evenly coated
  5. Line a baking tray with baking paper and spread the muesli evenly on it
  6. Bake for 30-40 minutes, stirring briefly every 5-10 minutes so everything turns golden brown evenly and nothing burns

*This recipe is measured in cups - you can use a completely normal coffee cup. You can't go wrong with the measurements, we mostly just throw everything into the bowl by feel and it turns out always great!

Note: do not bake dried fruit like cranberries or raisins along with it, stir them in afterwards!
